J. & E. Riggin Chinese dumplings recipe
Filling and making these dumplings is a fun family affair
As is the tradition, filling and making dumplings is a family affair – and that still holds true today on the J. & E. Riggin. The captains, the crew and interested guests all pitch in, giggling and chatting around the galley dining table, spread with ingredients as they flatten dough into rounds, and fill and pinch dozens of dumplings. On our 2023 windjammer sailing adventure with Captain Jocelyn Schmidt and her husband Captain Justin Schaefer, we found those who weren’t hands-deep in filling, instead tucked in on the deck peering down at the shenanigans.
Serves 4-5 for dinner. Makes about 30-40 dumplings.
Ingredients
Dumpling filling:
1 lb. ground pork (for veggie, she uses a mix of bok choy, shiitake mushrooms and shredded carrot, but you can modify to taste)
Half a head of Napa cabbage
4 small green onions, sliced
Half a bundle of cilantro, to taste, chopped
3 good sized slices of ginger, peeled and finely chopped
4 cloves of garlic, finely chopped
Salt and pepper to taste (about 1 or 2 tsp.)
